Biochemical composition of muscles of different constitution young ram of ascanian fine wool breed

The biochemical characteristics of muscles of Tavrian type of Ascanian fine wool breed young ram depending of their constitution were studied. It was established that lamb meat of coarse type characterized by highest biological value due to the highest ratio of protein: fat, the largest amount of total protein by ?-globulins, optimal content of total lipids, largest content of phospholipids and the smallest content of sterol fractions. The lamb meat of a coarse type has the highest energy value through the largest amount of fat in muscle tissue.
