L. R. Burda, P. V. Stapay

The data about chemical indexes of milk of Ukrainian mountain sheep with different color of wool under different conditions of their keeping are presented in this article. It was established that sheep's milk, obtained in pasture period, is characterized by the best chemical composition due to higher content of dry matter, protein, fat, carbohydrates. Calorie content of milk is by 31 % higher comparing to milk, obtained in stall period. Some differences in chemical composition of sheep's milk with the different color of wool is shown. It was established that milk of ewes with colored wool, especially black is characterized by the best chemical composition and biological value and also higher milk yields.
